Below are some of our favorite CBD keto recipes. You might be surprised to see what kinds of things you can still eat while maintaining this tricky diet. The keto lifestyle is easier to maintain than you think – it just takes making a few alterations to some of your traditional favorites.
CBD Keto Fudge Brownies
Is it okay if we just get right to dessert? Knowing that you can have a decadent, fudgy brownie on the keto diet might make you wonder if it’s really keto-friendly. Well, this recipe is absolutely keto-friendly and ridiculously easy to add your favorite Canna Trading Co. tincture to. Don’t forget to serve it with a scoop of keto chocolate ice cream on top!
A full stick of unsalted butter
¼ cup heavy cream
½ cup keto-friendly powdered sweetener
1/3 cup dark cocoa powder
1/3 cup sugar-free chocolate (chunks, chips or shaved off of a block)
1/4 dropper Canna Trading Co. 1500 mg Vanilla CBD Tincture per brownie (if you plan to cut this into 12 squares, use 3 droppers of tincture)
1/3 cup almond flour (sifted)
½ teaspoon coarse sea salt
1 teaspoon vanilla bean paste
2 large eggs plus an additional yolk
½ cup chopped and toasted pecans
Start by preheating your oven to 325 degrees. Line an 8×8 baking dish with parchment paper with an overhang on at least 2 sides for easier removal.
Create a double boiler on the stovetop. In a glass or heat-safe bowl, add the butter, heavy cream and sugar-free chocolate. Stir until melted. Remove the bowl from the heat.
In a separate bowl, whisk together the cocoa powder, salt, keto-friendly sweetener and almond flour.
Add 1 egg at a time to the bowl of melted chocolate. When incorporated, add the egg yolk and vanilla bean paste. Slowly incorporate the dry ingredients and fold them to combine.
*You will not use the hemp CBD tincture until after the brownies have baked.
Bake for 18-20 minutes. Toast the pecans in a dry skillet while the brownies bake. After they’ve cooled, toss them in the hemp CBD tincture and sprinkle them evenly over the top of the brownies.
Allow the brownies to cool for at least 10 minutes before cutting into portions.
Keto Caprese Chicken with Herbed CBD Olive Oil Drizzle
We love this CBD keto recipe because it’s great for gatherings, weeknights and can be made ahead of time. It’s quick, delicious and healthy.
4 – 6 boneless skinless chicken breasts
Pink sea salt to taste
Freshly cracked black pepper to taste
2 cups grape or cherry tomatoes (baby heirloom if you can find them)
¼ cup extra virgin olive oil
¼ cup balsamic vinegar (traditional or white)
3 cloves of garlic smashed, peeled and minced
¼ cup freshly torn basil
1 ½” slice of fresh mozzarella per chicken breast
3 tablespoons freshly chopped Italian parsley
Pinch of crushed red pepper flake
1 sprig fresh thyme stripped
Pinch of dry oregano
In a skillet, add 1 tablespoon of olive oil. Allow the oil to warm up and season the chicken breasts with salt and pepper on both sides. Place the chicken in the pan. When the chicken is cooked through, remove it from the pan and allow it to rest.
Build the sauce in your pan by adding the balsamic vinegar. Let this cook for 1 minute and back away from the stove (warm vinegar can be hard to breathe in). Add the garlic and sauté for 1 minute. Cut the tomatoes in half and add them to the pan. Simmer to soften for 6 minutes.
Put the chicken back in the pan. Cover each piece of chicken with the pan sauce and place a piece of mozzarella over on each piece. Top with torn basil and cover so the cheese can melt.
While the cheese melts, use the remaining ingredients to create your herbed CBD olive oil drizzle. Place the chicken on a serving platter and spoon the herbed CBD oil over the top.
Keto Fried Chicken with Cajun CBD Aioli
Yes, you can still have fried chicken on the keto diet. One of the benefits of the keto diet is that fat is your friend here. Our Cajun CBD aioli recipe is the perfect partner for this healthy fried chicken recipe.
6 chicken breasts with the bone and skin
Coarse sea salt
Freshly ground black pepper
½ cup buttermilk
½ cup heavy cream
¼ cup hot sauce
2 large eggs
¾ cup almond flour
1 ½ cups crushed pork rinds, any flavor
½ cup grated fresh parmesan cheese
2 teaspoons garlic powder
1 teaspoon paprika
2 droppers Canna Trading Co. Alchemy
½ cup mayonnaise
1 teaspoon Cajun seasoning (or cayenne, garlic powder, onion powder, black pepper and paprika)
1 teaspoon Sambal
5 grinds peppercorn medley
Preheat the oven to 400 degrees.
Start by making a marinade for your chicken by combining the buttermilk, hot sauce, garlic powder, salt, pepper and paprika. Place the chicken into a large bowl and cover it with the marinade. Toss the chicken to coat it all and cover. Leave on the counter for 1 hour.
While this sits, make your dredges.
In one bowl, whisk the eggs with the heavy cream. Set this aside
In another bowl, combine the almond flour, parmesan cheese and pork rinds. Season with black pepper, garlic powder and paprika to taste.
Remove the marinated chicken and quickly dip it into the egg and heavy cream mixture. Then coat it with the dry mixture.
Bake the chicken until it reaches an internal temperature of 165 degrees. This typically takes about 45 minutes. To prevent the chicken from getting soggy on one side, place a baking rack on top of your baking sheet to raise the chicken off of the surface. This also helps with even cooking.
While the chicken bakes, mix all of the ingredients together in one bowl for the aioli. Serve the aioli in a small bowl with a spoon so everyone can put as much on their plates as they wish.
**If you prefer, you can remove the chicken from the bone for quicker cooking. Reduce the baking time by half if you remove the bones.
