Mushroom Lentil Stew
It’s still a little chilly in the evenings. This mushroom lentil stew with CBD drizzle is one of our favorite CBD recipes for Lent. It’s a one-pot wonder that freezes well. It’s hearty and is like a warm hug from the inside out.
4 Portobello mushrooms
2 cups red lentils
3 stalks celery
3 bay leaves
2 sprigs fresh thyme
1 sprig fresh rosemary
2 cloves garlic
3 tablespoons extra virgin olive oil
3 droppers Canna Trading Co. Organic Olive Oil Tincture
1 tablespoon dry Italian seasoning
Sea salt and freshly ground peppercorn medley to taste
5 tablespoons whole butter
3 tablespoons flour
6 cups vegetable stock
1 sweet onion
1 cup baby carrots
3 russet potatoes
Start by putting a large stock pot on the stove. Rinse your lentils and check them for stones.
Start by cutting your onion, celery and carrots into small dices. Add them to the stock pot with 2 tablespoons of butter. After 5 minutes add your diced potatoes (it’s okay to leave the skins on since there are a lot of vitamins in the skins). Toss in your diced garlic. Clean your mushrooms and cut them into manageable pieces. Add the vegetable stock and lentils.
Toss in your bay leaves or tie them with butcher’s twine alone with the sprigs of rosemary and thyme.
Season with sea salt and pepper. Taste the liquid.
While the stew simmers (for at least 1 hour), make your roux in a nonstick skillet with the 3 tablespoons of flour and remaining 3 tablespoons of whole butter. Let this cook for a few minutes on medium low heat to cook the flour. The color should be blonde to very light caramel.
When your stew has cooked for 45 minutes, add the roux. Allow the stew to come up to a quick boil, stirring constantly to prevent lumps. Check the thickness. If you would like a thicker stew, you can always make a little more roux.
Now, for the CBD oil drizzle – add the Alchemy tincture, extra virgin olive oil and dry Italian seasoning to a bowl. Whisk to combine. Allow this to sit for about 15 minutes so that the herbs can soften. Place a teaspoon or two on top of each serving.
Serve with rolls or freshly baked bread and butter.
Baked Cheese Ravioli Casserole with CBD Oil Breadcrumb Topping
For this one of our CBD recipes for Lent, we’re going to take a little bit of help from the grocery store for the cheese ravioli. Of course you can make your own if you have the time, but this is a fun shortcut for a quick Lenten meal after a long week. You can also add protein to this after Lent too.
2 bags of frozen cheese ravioli
1 28 oz. can whole San Marzano tomatoes
½ cup tomato paste
2 cups vegetable stock
1 cup marinated artichoke hearts
½ green bell pepper diced
½ red bell pepper diced
3 cloves garlic minced
1 teaspoon celery seed
Sea salt and freshly ground peppercorn medley to taste
1 teaspoon dry oregano
¼ cup fresh Italian parsley coarsely chopped
6 fresh basil leaves torn
1 teaspoon garlic powder
1 teaspoon onion powder
2 cups shredded mozzarella cheese
2 tablespoons Italian seasoning
1 teaspoon dry thyme
1 teaspoon dry rosemary
CBD Bread Crumb Topping:
1 cup panko breadcrumbs
2 droppers Canna Trading Co. Alchemy tincture
Few grinds of pepper
½ teaspoon garlic powder
1 teaspoon Italian seasoning
½ cup grated parmesan
1 tablespoon butter
1 tablespoon freshly chopped Italian parsley
Preheat the oven to 375 degrees.
In a saucepan, hand crush your tomatoes. Add the fresh garlic and all of your dry seasonings. Simmer on medium low for 10 minutes. Add vegetable stock and tomato paste. Taste and adjust the seasoning. This is a quick sauce that will become more flavorful as it bakes in the oven.
Place 1/3 of the sauce in the bottom of a deep 9”x13” casserole dish. Add 1 bag of the frozen ravioli and 1/3 of your vegetables. Add 1/3 more of the sauce and repeat the layers.
Bake 45 minutes.
Prepare your bread crumb topping by tossing the panko breadcrumbs and seasonings together and adding them to a nonstick skillet. Add the butter. Toss to coat. Remove from heat and add the Alchemy and grated parmesan.
Add the shredded mozzarella cheese. Top with breadcrumb topping, bake an additional 5 minutes.
Serve this with garlic bread and a salad for a full, belly-busting meal.
Substitutions for These CBD Recipes for Lent
If there are allergies to any ingredients listed in these CBD recipes for Lent, we have some substitutions available for you.
You can easily replace the mushrooms with firm tofu. Allow the tofu to marinate in an olive oil and herb marinade for at least an hour. Tofu takes on flavor very well.
If there is a gluten allergy, chickpea, almond or coconut flour can be substituted to make the roux.
Cheese can be omitted. If cheese is an issue, you can make the ravioli bake with any noodle you have on hand.
