With life slowly returning to normal across the country, some of you may be starting to plan picnics and gatherings. We’ve created a few summer picnic salads with CBD for you to share with your friends and family members. We’ve included a couple that can sit out at room temperature for several hours and some that shouldn’t but are so delicious that may not be an issue.
CBD Cheddar Macaroni Salad
This macaroni salad can have protein added to it and can easily become an easy weeknight meal. It’s great with ham, chicken, shrimp or steak. If you aren’t a meat eater, you could easily grill up some marinated tofu for the top too.
1 pound elbow macaroni or ditalini
1 cup thawed frozen peas
1 ½ cups extra sharp cheddar cheese
2 droppers Canna Trading Co. Alchemy
1 ½ teaspoons fresh cracked black pepper
1 bell pepper seeded and diced
½ sweet onion diced
2 roma tomatoes seeded and diced
1 cup real mayonnaise
½ cup sour cream
Healthy pinch of sea salt
¼ cup fresh Italian parsley chopped
½ cup toasted sunflower kernels
Start a pot of water to boil on the stove. Boil pasta until it’s al dente. In a large mixing bowl, start the dressing by combining the mayonnaise, sour cream, Alchemy, salt, pepper and parsley. Mix well to combine. Add in your diced vegetables and thawed peas. Add the cooked and cooled pasta (you can toss some ice over the noodles to cool them faster). Fold in the cheese and sunflower kernels.
Serve at room temperature or chilled.
Note: For extra protein, feel free to add 3 or 4 hard boiled eggs to the bowl.
Simple Noodle Salad with Tomato CBD Vinaigrette
Noodles are cheap and filling. They’re a great vehicle for pot luck gatherings and for occasions when you need a larger amount of food. This noodle salad doesn’t require refrigeration.
1 pound spaghetti noodles cooked al dente and chilled
½ cup tomato juice
2 droppers Canna Trading Co. Organic Olive Oil Tincture
½ cup olive oil (you can also use Italian dressing too)
1 teaspoon dry oregano
1 teaspoon dry basil
1 tablespoon freshly chopped Italian parsley
1 English cucumber sliced thin
3 roma tomatoes seeded and diced
1/3 sweet onion sliced paper thin
½ cup black olives (optional)
½ cup button mushrooms wiped clean and sliced thin
1 cup arugula
For this recipe, all you have to do is boil and chill the noodles and then toss everything together in a bowl and toss. This salad is best when it’s sat overnight in the refrigerator and is served at room temperature. You can sprinkle some grated parmesan over the top too – parmesan is already aged and can sit out for a few hours without worry of spoiling.
This is another summer CBD salad that could become a meal with the addition a grilled protein. It would be delicious with shrimp and scallops.
Whole Grain Chickpea CBD Salad
This salad is filling and includes several summertime favorite flavors. The thing about this salad is – you can keep it strictly vegetables or mix in some dried fruit or it can easily become a fruit and nut whole grain salad. We’ll help you with creating the additional combinations after the main recipe.
1 cup farro
1 cup barley
1 cup quinoa
4 green onions
1 cup grilled or roasted eggplant
1 can chickpeas drained and toasted
2 whole roasted red peppers
½ cup olives (any olive you choose)
1 tablespoon capers
14 oz. marinated artichokes with the marinating liquid reserved
6 large fresh basil leaves
2 droppers Canna Trading Co. Alchemy or Organic Olive Oil Tincture
Crumbled feta cheese to taste
Salt and pepper to taste
½ cup good olive oil or leftover herb vinaigrette
For this recipe, we’re keeping flavors simple. Simply prepare your grains per their package instructions and spread them out onto a sheet pan to cool. Toast your chickpeas. If you want a little spice to this grain salad, sprinkle a little hot smoked paprika and chili powder or cayenne on the chickpeas as they toast.
Prepare your vegetables as the grains cook. The eggplant can just be seasoned with olive oil, salt and pepper. Let it cool before adding it to the salad. Chop your artichokes up a little bit, halve your olives and cut the roasted red peppers into thin strips and then cut those strips in half.
The basil should just be ripped by hand.
Toss all of your ingredients into a bowl and mix. If it seems like the grains are soaking up all of the dressing you’ve put on, this is where you’d use that artichoke marinade liquid and a little more olive oil.
Making variations of this grain salad:
- Add toasted nuts, sunflower kernels and dried cranberries to make a fruit, nut and veggie grain salad
- Add grilled seafood to the original recipe to create a meal
- Add arugula underneath the salad to make it an actual grain salad bowl
- Use grilled tofu if you aren’t a meat eater. Marinate the tofu first though – it takes on just about any flavor you want to add to it. You can also grill Portobello mushrooms as a meat replacement
- Instead of vegetables add toasted sunflower kernels, dried cranberries, fresh strawberries, dried apricots, fresh blueberries and toasted pecans. You can dress this with fresh mint and basil. For the dressing, you’d use coconut oil and 2 droppers of Canna Trading Co. Organic Olive Oil Tincture or our Vanilla Tincture
These variations offer variety for multiple gatherings. You can even make more than one variation for a single gathering too.
